One perfect lemon

Recently, Neal's parents sent us a Christmas package filled with goodies from the South.  The contents included pecans, pralines, candies, crab boil, fish fry, gumbo file', various Zatarain's mixes, Creole mustard, and a Christmas towel.  I love and appreciate everything we received, but my absolute favorite is this:

One perfect lemon.  A homegrown Meyer lemon from my in-laws' neighbor.  It is gorgeous.  The color is eye-popping and it smells so lemony.  I heart this lemon.

Now comes my dilemma.  How do I use this most beautiful bounty from nature?  My mother-in-law suggested I make lemonade, but I think this lemon was destined for a much higher purpose.  The question is, what?  What can I do with just one perfect lemon?  Bring on the suggestions!

Goodies from New Orleans!! I want the pralines! Are they from Aunt Sally's? I have not had those in years. Cajan food sounds good for supper tonight. Hope you don't have to go anywhere today. Roads all around us are closed. A good day to stay home around the fire. Maybe do some baking.

Shelly, the goodies are from Baton Rouge, but close enough! The pralines were homemade by my MIL. Yes,it is a good day to stay home and bake, which is exactly what I plan to do!

i wonder if you could find a recipe for a two-person tartlet to use that beautiful lemon in.

you need something that will call for the zest as well as the juice.
