Success!
Today I baked another loaf of butter crust bread... this time without the split-top butter crust and using whole wheat flour instead of white. I also used a different bread pan and the weather was just perfect. Who knows what I owe to the success, but my confidence has been restored - somewhat - that I can bake a nice loaf of bread in this climate!
