Happy Easter!

This is what we awoke to this morning...

And this is what we had for Easter breakfast...

In case you are wondering, those are beignets, a french donut very popular in New Orleans and served at the famous Cafe du Monde. I found a box of mix in the pantry that was at least a couple of years old, but it had never been opened. They weren't as good as the ones at Cafe du Monde, but they were passable for the real thing. And they made a nice treat with my Community Coffee, also a popular Louisiana product.

After breakfast, Neal trudged over to Herm and Eileen's in the snow, in his robe, to borrow their pressure cooker. We have recently discovered how easy it is to cook dry beans in a pressure cooker - a must for this altitude. Our Easter lunch will be homemade spicy pinto bean chili and cheese quesadillas - not your typical Easter meal, but perfect comfort food for a snowy day.

I've waited for 10 days to see what kind of responses I would get to my Pay It Forward post. I had hoped for more participation, but two people did respond - Shauna from Trying to Stay Calm and my friend Joe from Beavon Blog. While I'm not sure Joe totally understood the rules, I'm sending him a goodie bag anyway. Joe and Shauna, I'll be heading to the post office this week.

A great big thanks to Penny from Back to Basic Living where I learned of the Pay It Forward challenge. Penny's gifts arrived this week and they are awesome...homemade cucumber melon soap and lotion and a package of country soup mix. Thanks, Penny!

Wow, we had something similar to beignets at Olive Garden last night. They were called Italian donuts and they looked and tasted the same. Yummy!!!

I'm glad you liked your gifts - and it's great you found two more people who will pay it forward!

I absolutely love my pressure cooker. I use it three or four times a week. I have a pressure canner too and it is worth its weight in gold.

And snow on Easter???? Yikes! I've been complaining that we've been in the 50s with rain! Now every time I start to complain that it is cold here, I'm going to think of you and hush right up.

Penny, I have been researching pressure cookers and canners, and apparently they aren't the same thing. I'm hoping to can some of the bounty from our garden this year (fingers crossed), but I'm having trouble forking out the $80 to buy a pressure canner!
